Buying a jackfruit is a little bit intimidating — they are so large and prickly. And, it’s hard to tell if your choice is a good one. We’ve bought several duds this year, where the fruit has no taste whatsoever and the whole thing must be thrown out. But, when you get a good one it’s all worth it. Was it Melody or Jessa who told us to freeze jackfruit? That hit the jackpot! My, frozen jackfruit is awesome. You lose the slimy texture in the freezing. Another way to use jack fruit that I want to try is to blend the fruit, add to some rice flour, and fry it. Our neighbors gave us a plate and for once I ate the majority.
A friend gave me a bag full of baby mangoes. Amina peeled and de-seeded them, then I pressure cooked them for one whistle with maybe a fourth cup water. Then I fried some garlic, five-spice (pach foran), dried red chilis, bay leaf, and added the cooked mango. I added a tablespoon of sugar, gave it a stir and it was done. Sour achar!
