There is one fruit that I like but my husband doesn’t. It’s the fruit from the tal gach, the Palmyra Palm. Several months ago, people were cutting down these smaller coconuts from the tall trees. Then they cut into the nut to bring out 6 translucent chok, or eyes. This is the unripe fruit, and Thais eat it with ice and coconut milk. This year I bought ripened nuts, and when the outer layer of the nut was striped off, the inside was bright orange. Amina squeezed out the juice. She added water, flour, and date sugar, and then fried spoonfuls. Delicious.
