Tham Tua is a variation on papaya salad — it has everything papaya salad would have, but substituting the green beans for the papaya. We eat it with sticky rice, but it would be good as a salad too. I use the Thai crock but I am guessing that a food processor would do the trick. You don’t want the end result to be a paste, though, more like a mash!
Smash to a fine paste:
- 2 green chilis
- 4 garlic cloves
- 2 t of shrimp paste (not necessary)
- 1/2 T palm sugar/ honey
Add and pound till well mixed
- 2 c green beans, cut in two inch lengths
- 2 ripe small tomatoes
- juice of one lemon or more
- fish sauce to taste or salt
